  • Corn Dip

    We had this dip with our beans and pico last night (My aunt made this for my cousin’s wedding a couple of weeks ago–I thought it had cream cheese in it and was surprised to learn that it didn’t!):

    Corn Dip

    2 cans Mexi-corn, drained
    4 green onions, chopped
    1 c. mayo
    8 oz. sharp cheddar cheese (grated)
    1 small can green chilies, drained
    1 8 oz. container sour  cream (but I used a 6 oz. container of Greek yogurt)
    1/2 c. pico de gallo

    Mix all together and chill several hours.  Serve with chips or crackers. (We had Tostitos!)
